For us, fermentation not only means transforming ingredients, but also redefining our eating habits and perceptions. We want to rediscover the food of the past in order to shape it in a way that meets the requirements of the future.
Our mission goes far beyond the commercial aspect. We are driven by a desire to pioneer a new approach to food that celebrates biodiversity, honors the memory of traditions and is focused on a more sustainable future. In Switzerland, we were among the first to interpret fermentation in a modern way, convinced that we can all be active participants and sources of inspiration for a more conscious and ecological food industry.
